向笠園さんのお茶農園のある牧の原の土壌は水持ちが良く、 保肥力が高いので昔からお茶の限らず大根などの農産物に「甘み」があることで知られています。
その風土を生かして茶葉の形を残しながらも色と味の濃い深蒸し茶を作っています。

齋藤安彦さん Mr. Yasuhiko Saito (President of Ikumi mura)
無農薬茶の第一人者として有名。
大自然に囲まれた静岡県島田市伊久美で木の生命力を最大限に引き出し、有機質のぼかし肥料を作り、自然で健康的なお茶を栽培。
日本のお茶は味主体だが、中国茶は香りが主体。日本茶をもっと香りのあるものにしたいと中国へ渡ったのがきっかけで、以来発酵茶や釜炒り茶など、中国の製茶技術を取り入れた多種多様なお茶作りをしている。蒸す方法しかない日本の緑茶に比べ、中国茶は直接熱を加えることで幾種類ものお茶を創り出してきた。かって大学に残り熱力学を研究していた齋藤さんの研究は、お茶づくりにも活かされている。「製茶は熱力学なんです」。やぶきた一辺倒の緑茶栽培ではなく、静岡県が生んだ香駿や農水省の試験場で生まれた蒼風など、多品種を積極的に栽培。国産烏龍茶作りの先駆け的存在でもあり、遊び心いっぱいの茶文化研究家でもある。
齋藤さんの作るお茶は「齋藤安彦のお茶」として人気を博している。
He is renowned as a leading expert on pesticide-free tea. Surrounded by nature, in Ikumi, Shimada City, Shizuoka Prefecture, he maximizes the vitality of his trees, creates organic compost, and cultivates natural, healthy tea. While Japanese tea is primarily about flavor, Chinese tea is primarily about aroma. His desire to make Japanese tea more fragrant led him to travel to China, and he has since been producing a wide variety of teas incorporating Chinese tea-making techniques, such as fermented tea and pan-fried tea. Unlike Japanese green tea, which is only steamed, Chinese tea has been developed by applying direct heat, resulting in the creation of many different varieties. Having previously stayed on at university to study thermodynamics, Saito's research is now being put to use in tea production. "Tea production is all about thermodynamics." Rather than solely focusing on Yabukita green tea, he actively cultivates a variety of varieties, including Shizuoka Prefecture's Koshun and Sofu, developed at the Ministry of Agriculture, Forestry and Fisheries' experimental station. He is a pioneer in the production of domestic oolong tea, and a playful tea culture researcher. The tea made by Saito has become popular as "Saito Yasuhiko's Tea."
薩摩知覧茶 宮原園さん Satsuma Chiran tea Miyaharaen.
